Shami kabab is one of those special dishes that bring the family together. It is the first thing that gets finished when you make it for Eid or any celebration.
What makes a perfect shami kabab is the balance between meat and lentils. The texture should be soft inside and crispy outside. The taste should be balanced with spices without overpowering the meat.
Ingredients You Need
Take 500 grams of minced meat, either beef or mutton. Add one cup of split chickpeas or lentils that you have soaked overnight. You will need two medium onions chopped finely. One tablespoon of ginger garlic paste. Two to three green chillies chopped. And your basic spices - salt, red chilli powder, coriander powder, cumin powder.
Cooking the Lentils
First cook your soaked lentils with a little salt until they are completely soft. This takes about 30 to 40 minutes. When the lentils are soft, drain all the water and let them cool.
Preparing the Meat Mixture
In a pan, heat two tablespoons of oil. Add chopped onions and fry until golden. Then add the ginger garlic paste and cook for one minute. Now add your minced meat and cook on high heat until it is completely cooked and brown. This takes about ten minutes.
Add your spices to the cooked meat. Add half a teaspoon of red chilli powder, half a teaspoon of coriander powder, and a quarter teaspoon of cumin powder. Mix everything well and let it cook for two minutes. Then turn off the heat and let it cool.
Mixing Everything Together
Take your cooked lentils and add them to the cooled meat mixture. Add two to three finely chopped green chillies. Mix everything together with your hands or a spoon. The mixture should be sticky enough to hold together but not too wet.
Shaping the Kababs
Wet your hands with water. Take a handful of the mixture and shape it into a ball. Then flatten it slightly to make a kabab shape. Each kabab should be about two centimeters thick. Place them on a plate.
Cooking the Kababs
Heat oil in a deep pan for frying. When the oil is hot, carefully place your kababs in it. Do not overcrowd the pan. Fry them on both sides until they turn golden brown. This takes about three to four minutes for each side.
Take them out on paper towels to remove extra oil.
Serving Your Shami Kababs
Serve them hot with mint chutney, sliced onions, and lemon. They taste even better the next day when the flavors have settled.
These kababs can be stored in the refrigerator for three days. You can reheat them in the oven without frying again.
